Mississippi ring cake

 

Ingredients:

225 g flour                                                      1 pinch of salt

1 teaspoon baking powder                         300 ml strong, scalded coffee

50 ml Bourbon or Brandy                           150 g chocolate

225 g butter or margarine                         400 g sugar

2 fresh eggs, at room temperature         1 1/2 teaspoon vanilla essence

cacao powder for dusting                          sweet cream or ice cream as side dish

 

If you don't own a ring cake form you may also take a normal ring form - it will not affect the taste of this wonderful cake.

 

Pre-heat the oven on 140 degrees or gas grade 1. Sieve flour, salt and baking powder together in a bowl und take aside, till you need it.

 

 

Fill a big pot with water and hang in a bowl of steel so that the water doesn't touch the bowl's bottom. Give coffee, bourbon resp. brandy , chocolate and fat (butter or margarine) into the bowl. Boil up the water and stir the ingredients in the bain-marie till smooth.

Pour out the chocolate mix into a big bowl. Stir in the sugar with an electric beater on low speed till the sugar has dissolved.

 

Put the beater on a middel speed and add the sieved ingredients.

 

Stir all well, then beat in the eggs and the vanilla till all is mixed up well.

 

Fill the mix in a well buttered and lightly cacao-dusted ring cake form. Bake it for around 80 minutes in the oven till a metal or wood bar which was stuck in can be extracted without adherent dough rests.

 

Take out the cake from the oven and let it cool down for about 15 minutes in the form, then tip it on a kitchen grate and let it cool completely.

 

Dust the cold cake with a little cacao powder. Then serve it with sweet cream or ice cream at own choice.

 

Vanilla ice is served best to this cake.
